I like his weird/early/MoI stuff best, but albums like Roxy & elsewhere and Bongo fury (w/Beefheart) are pretty cool when you're in the mood.
I also really liked Grand Wazoo and his weirder than weird stuff (Jazz from Hell, Mothers of prevention).

I just finished reading 'The Real Frank Zappa Book' . in it he specifically address the shit eating issue. IT NEVER HAPPENED. It was a 'shitty' rumor. BTW, TRFZB is a sweet read. Its written by FZ so it has some great lines.

When i heard the song "He's so Gay" i totally flipped out i think he was pretty cool..just after hearing one song 8)

I know Chad Wackerman plays the drums on it!

Wackerman is playing on Holdsworth's latest live album 'All Night Wrong'. Check it out, it's awesome.

It is. So was "Concert for guitar and low budget orchestra".
Lähter was way underrated, imo. Not Zappa at his best, but still a damn solid album.

My Zappa recommendations:
We're only in it for the money
Uncle meat
Lumpy gravy (semi-instrumental album, pretty good, imo)
Jazz from Hell (weirder than his weird stuff)
The grand Wazoo (jazz/fusion-Zappa. There's a whole story behind it, on how Zappa got injured onstage, and then he wasn't able to sing for a while...get this and get Waka/Jawaka)
Best band you never heard in your life (compilation of live stuff, get this only when you're familiar with Zappa...or, if anything, get it for the great version of Stairway to Heaven they did)
Bongo fury (w/Beefheart - some of his "serious" stuff)

No, I don't ever recommend stupid greatest hits albums to anyone. I think such albums should be abolished. It's bad. Bad bad bad bad bad bad.

Not really a g.hits album, but Cruisin' with Ruben and the jets has some pretty cool stuff, if you're in the mellow mood. Zappa's not heavy (as in "meh-tul"), but this one's just plain soft. It's kinda like his murder ballads, or something. Funny doo wop shit.
